Cholesterol - Is it a disease?

Cholesterol, as we can see has become a major health concern through the 19th century. Why then do the caves of Alta Mira or the scriptures of the Inca showed no signs of cholesterol induced disease like heart attacks, obesity and the like. The answer should be our modern day food habits - we now have processed meats, processed cheese, processed butter, processed tomatoes, all of these contain some kind of preservative or pesticide. To further imply our gullibility, we humans are being processed by these foods. Studies indicate... that the "Root Cause" of Cholesterol is the modern lifestyle, causing your body to become diseased by acids: sugars, carbohydrates, excess fats and uric acid (all very common in our modern diets) keep flowing through our bloodstream.

One in five humans has a high cholesterol level. It seems that we bring it upon ourselves, though we have the power to keep our cholesterol levels at a healthy ratio. In high-risk populations, some of the adverse effects of diet composition undoubtedly relate to established risk factors, e.g., effects of high intakes of saturated fatty acids and cholesterol on LDL cholesterol levels and of high salt intakes on blood pressure. Moreover, dietary patterns appear to influence baseline risk beyond the known risk factors. For example, populations that consume diets high in fruits, vegetables, whole grains, and unsaturated fatty acids appear to be at a lower baseline risk than can be explained by standard risk factors. The particular nutrients that impart this lower risk have not been adequately defined, but strong candidates include antioxidant nutrients, folic acid, other B-vitamins, omega-3 fatty acids, and other micronutrients.
